I was wondering what to make for dinner and I decided to make a colorful bowl of vegetables, grains and protein with whatever I have in my refrigerator.
If you are on a healthy and a low carb diet, this bowl will put a smile on your face. Its super easy, delicious and is definitely worth a try. It’s a great way to get a variety of nutrients in your diet.
What do we have in this “Guilt free” and “Colorful Bowl”? let’s see!
- Air Fryer Beetroot Cutlets
- Tossed Green Salad 🥒🍅🧅🥒🍅
- Sliced Avocados 🥑
- Buttery Garlic Green Beans
Ingredients for Beetroot Cutlets:
- 2 beets
- 1 medium carrot
- few pieces of cabbage
- 1 sweet orange pepper
- 1 sweet yellow pepper
- 4 florets broccoli
- 3 pods of garlic
- 1 jalapeño
- a few springs of cilantro
- 1 slice of brown bread
- 1/2 cup Buckwheat Flour
- 2 tbsp Corn flour
- few peanuts
- 1 tbsp cumin powder
- 1 tsp Paprika
- 2 tbsp lemon juice
- salt and pepper to taste
Ingredients for Tossed Green Salad:
- 1/2 cup cucumbers sliced
- 1/2 cup red onions peeled and sliced
- 1/2 cup tomatoes diced
- 1/4 cup Red Radish sliced.
- 1 tbsp olive oil,
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- 1 tbsp Dill chopped
salt and pepper to taste.
Ingredients for Buttery Garlic French Green Beans
- 250g long fresh beans
- 1tbsp garlic finely chopped
- 2 tbsp Peanuts or walnuts
- 1 tbsp everything bagel seasoning
- Salt and pepper to taste
- Gather all the above ingredients in a food processor and pulse it well.
- Remove it in a bowl and make it into cutlets (patties).
- Spray few drops of olive oil and Pan fry or Air Fry them till golden on both sides.
- Keep it aside.
Tossed Green Salad
- Toss up the salad with all the above ingredients and herbs.
- Chill it for 1/2 an hour.
Buttery Garlic French Green Beans
- Heat water in a pan and when it starts boiling, add long beans and 1/2 tsp salt.
- Cook until the beans are soft.
- Drain water.
- Heat butter in a pan, Sauté garlic until golden.
- Add the green beans and salt and stir till it’s mixed well.
- Everything bagel seasoning
- Add peanuts or walnuts.
- Keep it aside.
- Peel and slice the avocadoes and arrange it in a platter.
- Arrange all the above dishes in a nice bowl.
- Serve with a Creamy avocado cilantro lime dressing
